  • 1 Large Whole Chicken
  • 150 g Butter, room temperature
  • 2 Garlic Cloves
  • 15 g Flat Leaf Parsley
  • 1 Lemon, juice and zest
  • Fresh Rosemary
  • Salt and Pepper
  • Dried Chilli Flakes
  • Olive Oil

  • One Small Bowl

Instructions

  1. Preheat the oven to 190C (170C fan).
  2. Rinse the chicken, inside and out, with cold water and pat dry with a kitchen roll. Rub the whole bird in with a little oil and season well with salt and pepper.
  3. In a bowl, mix softened butter, zest from 1 lemon and finely chopped garlic and parsley.
  4. Using your fingers, make a pocket between the skin and the breast of the chicken. Be careful not to get holes in the skin. Fill most of the herb butter into the pocket and squeeze (or massage) it well over the whole chicken breast.
  5. Place the chicken in a suitable baking dish. Add the rest of the herb butter atop of the chicken and squeeze over the juice of half a lemon. Put the two half lemons in the chicken. Spread some rosemary sprigs over and under the chicken, and sprinkle over some dried chilli.
  6. Roast the chicken for about 1 hour (depending on the chicken's size, add 15 - 20 minutes if the chicken is closer to 2 kg). The chicken is ready when the juice from the thighs runs clear.
  7. Pour a little of the butter/broth (which forms in the dish during the roasting) over the chicken a few times while roasting.
  8. Leave the chicken to rest 10-20 minutes before slicing and serve with your favourite side dish.
