Mango Salsa

  • 1 mango, chopped into cubes
  • 1/2 red onion, finely chopped
  • 1 chilli, finely chopped
  • 1 tbsp fresh ginger, finely chopped
  • The juice of 1 lime
  • 15 g coriander
  • Salt and pepper, to taste

Avocado Cream

  • 1 avocado
  • 1 tbsp crème fraîche
  • The juice of half a lime
  • A pinch of salt

The Rest

  • 2 handfuls of rocket
  • 250 g halloumi
  • 2 tbsp olive oil
  • 4 soft taco wraps
  • 4 tbsp crème fraîche

Instructions

  1. Mix chopped onion, chilli, mango, ginger and coriander in a bowl. Squeeze over the lime juice, season with salt and pepper, mix well and set aside.
  2. Add all the ingredients for the avocado cream in a blender (or use a hand mixer) and blend until a smooth cream appears.
  3. Slice the halloumi and cook in a large frying pan together with the olive oil over medium-high heat for 2-3 minutes on each side until golden.
  4. Heat the wraps and add avocado cream, rocket, mango salsa, halloumi and a drizzle of crème fraîche.
