Super Easy Tarte Tatin

This delicious but simple dessert is the perfect pud for a Sunday lunch. Serve with a scoop of ice cream & a simple butterscotch sauce, or crème fraîche.

  • 500 g puff pastry
  • 5-6 eating apples (a mixture of sweet and sharp varieties works best)
  • 200 g golden caster sugar
  • 1 vanilla pod, seeds scraped out
  • 50 g butter
  • Instructions

    You Will Need:

    1. An ovenproof frying pan


    1. Preheat your oven to 180c
    2. Roll out your pastry until it’s around 0.5cm thick, cut into a circle the same size as the rim of your frying pan and put to one side.
    3. Peel core and slice each apples into 3 rounds.
    4. Over a medium-high heat put your sugar into the pan to dissolve, bothering it every now and again to help bring the sugar in. Once melted turn of the heat, add the butter, stirring to bring together and emulsify. Add the vanilla seeds and stir through before adding the pods.
    5. Layer your apples on top of the caramel before toping with your puff pastry disk, carefully tucking down the edges using a silicon spoon/ spatula.
    6. Cook in the oven for around 35 minutes, until your pastry is golden brown and caramel is bubbling around the edges.
    7. Leave to rest for 5 - 10 minutes before carefully turning out onto your serving plate or platter (note: Caramel will be exceedingly hot, take caution - use a serving plate larger than your pan and wear oven gloves!
