Crispy Potatoes

  • 3 large potatoes
  • 3 tbsp extra virgin olive oil
  • 1 clove of garlic, finely chopped
  • Salt and pepper

Salmon and Marinade

  • 450/500g whole side of salmon, skin off
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 chilli, finely chopped
  • Salt and pepper
  • 3 spring onions, chopped
  • 3 tbsp chives, finely chopped

You Will Also Need:

  • One large baking tray
  • Two small mixing bowls

Instructions

  1. Preheat the oven to 175C fan.
  2. Slice the potatoes into thin slices and lay them on a baking tray lined with baking parchment. Spread them out into a rectangle, slightly overlapping each other—mix olive oil and garlic before drizzling it over the potatoes—season with salt and pepper. Roast the potatoes for 17-20 minutes.
  3. Meanwhile, season the salmon with salt and pepper and mix oil, lemon juice and chilli before pouring it over the salmon.
  4. Remove the potatoes from the oven and place the salmon on top of them. Place back into the oven and cook for 16-17 minutes, or until the salmon is cooked through and the potatoes on the edges have gone crispy.
  5. Serve salmon and potatoes topped with chopped spring onion and chives.
