Perfect Pesto

  • ½ a clove of garlic
  • 1 big bunch of fresh basil
  • 1 handful of pine nuts
  • 1 good handful of freshly grates Parmesan cheese
  • Extra virgin olive oil
  • 1 lemon (optional)
  • Maldon sea salt
  • Instructions

    1. Blitz the garlic in a food processor or blender
    2. Add the basil leaves and pine nuts (very lightly toast first, if you like) and pulse again, then pulse in half the Parmesan
    3. Drizzle in some olive oil - just enough to bring it together
    4. Add the remaining cheese, a pinch of salt and a squeeze of lemon juice and pulse
    5. Add a bite more oil until you have a nice ozzy consistency (you can counteract with more cheese if it gets too runny)
    6. Add more lemon/salt to taste
