One-Pot with Sausage and Tortellini

Ingredients

  • 300 g raw sausage of your choice (used here: Fennel and Chilli Sausage)
  • 250 g tortellini of your choice (used here: Four Cheeses)
  • 1 red onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 3 carrots, cut into small pieces
  • 200 g cherry tomatoes, halved
  • 400 g tinned chopped tomatoes
  • 2 tbsp tomato puree
  • 750 ml chicken stock
  • ½ courgette, cut into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp chilli flakes (optional)
  • Freshly ground pepper, salt and sugar to taste
  • Grated parmesan to serve

    • 1 casserole, approximately 4 litres

    Instructions

    1. Cut vegetables as described and place all in the casserole.
    2. Add tinned tomatoes, tomato puree, chicken stock and spices. Turn on high, when boiling turn low and let simmer with lid for 10 minutes stirring now and then.
    1. Squeeze small balls out of the sausage and add them to the casserole together with the vegetables. Let simmer for 5 minutes.
    2. Taste with pepper, salt and sugar before adding the tortellini. Let simmer for 3-5 minutes until pasta is al-dente.
    3. Serve with grated parmesan.
