One-Pot Vegetable Ravioli Soup

  • 1 tbsp olive oil
  • 1 medium onion, cut into pieces
  • 2 carrots, peeled and sliced
  • 1 large courgette, sliced into half-moons
  • 1200 ml water
  • 1 vegetable stock pot
  • 400 g tinned tomatoes
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • 250 g fresh ravioli of your choice (used here - spinach and ricotta)
  • 1 radicchio, roughly chopped
  • Salt and pepper, to taste
  • Parmesan cheese, to serve

You Will Also Need:

  • One large casserole, approximately 4 litres

Instructions

  1. Heat the olive oil in a casserole over medium heat. Add onions and carrots and sauté for about 5 minutes. Add the courgette and sauté for another 2 minutes.
  2. Add water, stock pot, tinned tomatoes and herbs. Bring to a boil and add the ravioli. Cook accordingly to package directions. Just before ravioli is al-dente add the radicchio for the last minute.
  3. Season to taste with salt and pepper and serve in bowls garnished with grated parmesan.
