One-Pot Spaghettini with Greens

  • 500 g spaghettini or spaghetti
  • 1 litre water
  • 1 vegetable stock pot
  • 1 large courgette, grated
  • 200 g sugar snap peas, halved
  • 200 g asparagus, halved
  • 1 bunch cavolo nero
  • Salt and pepper, to taste
  • Grated parmesan, for garnishing

You Will Also Need:

  • One large casserole, approx. 4 litres

Instructions

  1. Grate the courgette, roughly chop the cavolo nero and half the sugar snap peas and asparagus. Set aside.
  2. Add spaghettini, water, stockpot and courgette to the casserole and bring to a boil over medium-high heat. Turn down the heat and leave to simmer for 7 minutes.
  3. Stir in sugar snaps peas, asparagus and cavolo nero and continue to simmer for a few more minutes, until the pasta is al-dente and the vegetables have softened but still have some crunch. Remember to stir occasionally to avoid pasta sticking to the casserole. Most of the water should have evaporated and created a sauce. If too much water left, drain some of it before serving.
  4. Season to your liking with salt and pepper and serve in bowls garnished with freshly grated parmesan.
