One-Pot Pasta with Spicy ‘Nduja Sausage

  • 200 g N’duja (or other spicy sausage)
  • 2 shallot, finely chopped
  • 3 garlic cloves, finely chopped
  • 200 g sun dried tomatoes, roughly chopped
  • 500 g rigatoni
  • 500 g passata
  • 1.5 litres vegetable stock
  • 150 g fresh buffalo mozzarella
  • Salt and freshly ground black pepper, to taste
  • 20 g basil leaves, to garnish
  • You will also need...

    •  1 casserole, approximately 4 litres


    1. Cut vegetables as described, tear the N`duja and add to the casserole.
    2. Add pasta, vegetable stock, passata and give it a good stir. Turn the heat on high, when boiling turn down and let simmer for 14-16 minutes until almost all of the liquid has evaporated and the pasta is al dente. Add more stock if needed. Remember to stir frequently to avoid pasta sticking to the casserole.
    1. Season with salt and pepper and add the buffalo mozzarella.
    2. Garnish with fresh basil and enjoy warm!
