One-Pot Pasta with Romanesco Broccoli and Swiss Chard

  • 400 g spaghetti
  • 1 large Romanesco broccoli
  • 6-8 stalks of Swiss chard
  • 2 big handfuls of baby sugar snap peas
  • 4-6 spring onions
  • 30 g fresh herbs, used here: mint and parsley
  • 1 lemon, zest and juice
  • 2 tbs olive oil
  • Salt and pepper, to taste
  • Fresh parmesan and chilli flakes, for serving

You Will Also Need:

  • One large casserole, approx. 4 litres

Instructions

  1. Fill a large casserole 2/3 with water and place over high heat. Add a good pinch of salt and the spaghetti. Bring to a boil, turn heat to medium and leave to simmer while occasionally stirring for about 6-7 minutes.
  2. While the spaghetti simmer prepares the vegetables, slice the Romanesco stem and florets into pieces. Slice the stems of the Swiss chard into pieces and roughly chop the leaves, half the sugar snap peas.
  3. Roughly chop the spring onions, and fresh herbs then set aside.
  4. Once it’s a few minutes until the spaghetti is al-dents add the Romanesco, Swiss Chard and sugar snap peas. Leave to simmer for about 3 minutes while stirring, until pasta is al-dente and the vegetables are cooked, but still crunchy.
  5. Drain the excess water before placing back into the casserole.
  6. Season to taste with salt and pepper and add the chopped spring onions and fresh herbs. Add the olive oil and the lemon zest and juice before stirring it all together.
  7. Serve immediately in warm bowls and garnish with Parmesan and chilli flakes.
