One-Pot Pasta with Chorizo and Tomato

  • 250 g Rummo tagliatelle
  • 200 g tomatoes
  • 200 g chorizo, cut into pieces
  • 3 shallot onions, sliced thinly
  • 4 garlic cloves, sliced thinly
  • 750 ml chicken stock
  • 25 g basil
  • 1 pinch of chilli flakes, optional
  • Parmesan, freshly ground black pepper and salt to garnish
  • Instructions

    1. Slice chorizo and the vegetables as described and place in a pot together with pasta, stock and basil.
    1. Bring to a boil, turn down heat and let it simmer for 8-10 minutes while stirring frequently until pasta is al dente and the water has evaporated.
    2. Serve and enjoy!
