One-Pot Pasta with Broccoli and Sun-Dried Tomatoes

  • 400 g of your favourite dried pasta
  • 1200 ml water
  • 200 g tenderstem broccoli, cut into 2cm pieces
  • 150 g basil pesto
  • 100 g sun-dried tomatoes, roughly chopped
  • 20 g fresh parsley, roughly chopped plus more to garnish
  • 50 g goat's cheese, crumbled
  • Salt and pepper, to taste

You Will Also Need:

  • One large casserole, approximately 4 litres

Instructions

  1. Place pasta in a casserole and add the water. Bring to a boil on high heat before turning down to medium and leave to simmer while occasionally stirring for about 10 minutes or until it’s only a few minutes left before the pasta is al-dente.
  2. Add the broccoli to the casserole and continue to simmer for another 3 minutes until pasta is al-dente and broccoli is tender but still crispy. If any water left in the casserole, drain before the next steps.
  3. Remove from heat and stir in pesto, sun-dried tomatoes and flat-leaf parsley - season to taste with salt and pepper.
  4. Garnish with more parsley and some crumbled goat cheese before serving immediately in warm bowls.
