One-Pot Pasta with Aubergine and Mushroom

  • 400 g penne
  • 1 small aubergine, diced
  • 250 g button mushrooms, quartered
  • 2 cloves of garlic, minced
  • 800 g tinned tomatoes
  • 400 g water
  • 1 vegetable stock pot
  • Fresh parsley for garnish

You Will Also Need:

  • One large casserole, approx. 4 litres

Instructions

  1. Rinse the vegetables and dice aubergine into small cubes, quarter the mushrooms and mince the garlic.
  2. Add penne, aubergine, mushroom, garlic, tinned tomatoes, water and stock pot to the casserole.
  3. Bring mixture to a boil on high heat then turn down to medium and let simmer uncovered for about 12-14 minutes, until pasta is al-dente and most of the sauce has evaporated. Stir frequently to avoid pasta sticking to the casserole.
  4. Taste and adjust seasoning and garnish with flat leaf parsley. Enjoy!
