One-Pot Pasta Bolognese

  • 350 g penne pasta
  • 1 large onion
  • 2 cloves of garlic
  • 2 carrots, medium size
  • 3 celery stalks
  • 2 tsp oregano, dried
  • 500 g mince meat
  • 1 kg passata
  • 800 ml beef stock (feel free to use 1 beef stock cube)
  • salt, pepper and sugar to taste
  • olive oil
  • 125 g burrata
  • Fresh basil to garnish

    • 1 casserole, approximately 4 litres


    1. Finely chop onions and garlic. Cut carrots and celery stalks into small pieces.
    2. Warm some olive oil in a large casserole. Sweat the onions for a few minutes before adding the garlic. Cook for another minute before adding carrots, celery and oregano. Continue to cook for about 10 minutes until vegetables are golden.
    3. Add the mince meat to the casserole and cook until meat is browned. Add passata and beef stock and bring to a boil before adding the pasta. Simmer the pasta for about 15 minutes until the sauce has thickened and the pasta is al-dente. Remember to stir frequently to avoid pasta sticking to the casserole.
    1. Season with salt, pepper and sugar. Garnish with burrata and fresh basil.
