One-Pot Pasta Bolognese

Ingredients
- 350 g penne pasta
- 1 large onion
- 2 cloves of garlic
- 2 carrots, medium size
- 3 celery stalks
- 2 tsp oregano, dried
- 500 g mince meat
- 1 kg passata
- 800 ml beef stock (feel free to use 1 beef stock cube)
- salt, pepper and sugar to taste
- olive oil
- 125 g burrata
- Fresh basil to garnish
You will also need...
- 1 casserole, approximately 4 litres
Instructions
- Finely chop onions and garlic. Cut carrots and celery stalks into small pieces.
- Warm some olive oil in a large casserole. Sweat the onions for a few minutes before adding the garlic. Cook for another minute before adding carrots, celery and oregano. Continue to cook for about 10 minutes until vegetables are golden.
- Add the mince meat to the casserole and cook until meat is browned. Add passata and beef stock and bring to a boil before adding the pasta. Simmer the pasta for about 15 minutes until the sauce has thickened and the pasta is al-dente. Remember to stir frequently to avoid pasta sticking to the casserole.

- Season with salt, pepper and sugar. Garnish with burrata and fresh basil.
