One-Pot Creamy Pasta with Mushrooms and Spinach

Ingredients
- 400 g Farfalle pasta
- 200 g butter
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 400 g mushrooms, sliced
- 300 g fresh spinach
- 700 ml vegetable stock
- 300 ml double cream
- 1 tsp Italian seasoning
- 50 g Parmesan cheese, grated
- Salt, pepper and chilli flakes to taste

- 1 large casserole, approximately 4 litres
Instructions
- Melt 20g butter in a large casserole over medium-high heat. Add the onion and sauté until softened, add mushrooms and continue to cook for 3-4 minutes. Let the garlic fry with the onions and mushrooms for the last minute.
- Add the pasta, stock and double cream, bring to a boil over high heat. Reduce the heat back to medium and cook until the pasta is al-dente, about 10-12 minutes. Stir the pasta occasionally to avoid the pasta sticking to the casserole.

- Stir in the spinach and Parmesan cheese, until spinach has wilted and cheese has melted.
- Serve in bowls garnished with freshly ground pepper, chilli flakes (for some heath) and more Parmesan cheese.
