One-Pot Creamy Pasta with Mushrooms and Spinach

  • 400 g Farfalle pasta
  • 200 g butter
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 400 g mushrooms, sliced
  • 300 g fresh spinach
  • 700 ml vegetable stock
  • 300 ml double cream
  • 1 tsp Italian seasoning
  • 50 g Parmesan cheese, grated
  • Salt, pepper and chilli flakes to taste

    • 1 large casserole, approximately 4 litres 


    1. Melt 20g butter in a large casserole over medium-high heat. Add the onion and sauté until softened, add mushrooms and continue to cook for 3-4 minutes. Let the garlic fry with the onions and mushrooms for the last minute.
    2. Add the pasta, stock and double cream, bring to a boil over high heat. Reduce the heat back to medium and cook until the pasta is al-dente, about 10-12 minutes. Stir the pasta occasionally to avoid the pasta sticking to the casserole.
    1. Stir in the spinach and Parmesan cheese, until spinach has wilted and cheese has melted. 
    2. Serve in bowls garnished with freshly ground pepper, chilli flakes (for some heath) and more Parmesan cheese.
