One-Pot Cheesy Pasta with Broccoli

  • 2 tbsp olive oil
  • 300 g fusilli
  • 1 garlic clove, minced
  • 1 lemon, zest only
  • 100 g cheddar
  • 180 g full fat soft cheese
  • 125 g mozzarella
  • 500 ml whole milk
  • 300 ml water
  • 1 medium sized broccoli, cut into florets ( use the stem by cutting into small pieces)
  • Salt and pepper, to taste

You Will Also Need:

  • One large casserole, approx. 4 litres

Instructions

  1. Put fusilli, garlic, lemon zest, olive oil, cheddar, soft cheese, whole milk, water, salt and pepper into your casserole and bring to a boil on high heat.
  2. Reduce to medium heat once boiling and add broccoli.
  3. Cook for about 10 minutes, until pasta is al dente and most of the milk and water has evaporated and formed a reduced and cheesy sauce.
  4. Stir in the mozzarella, season to taste and serve immediately.
