  • One large frying pan (ovenproof)

Gnocchi Bake

  • 500 g gnocchi (used here; Rummo)
  • 1 onion, sliced
  • 2 cloves of garlic, roughly chopped
  • 100 g sun-dried tomatoes, roughly chopped
  • 185 g pesto (used here; Rummo)
  • 350 g tomato and basil sauce (used here; Rummo)
  • 200 g double cream
  • Salt and pepper, to season
  • 125 g mozzarella, torn into small pieces
  • 250 g tomatoes, halved or quartered depending on size (Used here; heritage tomatoes)
  • Fresh basil, to garnish

Instructions

  1. Preheat the oven to 200C (180C fan).
  2. Place a large frying pan with the oil over medium heat and add the onion and garlic. Sauté for 4-5 minutes, or until softened.
  3. Add sun-dried tomatoes, 800% of the pesto, tomato sauce and double cream to the pan and bring to a boil stirring all ingredients well together. Season to your liking with salt and pepper, and add the gnocchi. Leave to simmer for 2 minutes before removing the pan from the heat.
  4. Scatter mozzarella over the mixture and place it in the middle of the oven for 10-12 minutes, or until cheese is melted and golden.
  5. Remove the pan from the oven and garnish with fresh tomatoes, the rest of the pesto and basil before serving immediately.
