Ingredients
You'll Need
- One large mixing bowl
- One medium-sized mixing bowl
- One small saucepan
- Kitchen scale
- Waffle maker (or large frying pan)
Ingredients
waffle batter
- 3 eggs
- 700 ml milk
- 200 g sour cream
- 45 g unsalted butter, melted
- 2 tbsp sugar
- ½ tsp vanilla paste/essence
- 1 ½ baking soda
- 300 ml rolled oats
- 700 ml plain flour
cold-stirred strawberries
- 500 g strawberries
- 100 g sugar
- 1 tbsp lemon juice
Instructions
- Whisk egg and sugar together in a large mixing bowl and add all the dry and wet ingredients alternately.
- Whisk until the batter is smooth.
- Cover and leave in the fridge for at least 15 minutes before you cook the waffles.
- While the batter rests, you can make the cold-stirred strawberries. Finely chop the strawberries and mix well together with the sugar and the lemon juice until sugar is dissolved. Taste and add more sugar and/or lemon juice if necessary. Set aside until ready to serve. It can be left in the fridge for 2-3 days.
- This batter is traditionally cooked in a Norwegian waffle maker, one ladleful at a time, but can be made as small pancakes in a large frying pan. Heat some butter in a large frying pan, add three small ladlefuls of batter, cook for 1-2 minutes on each side, or until cooked through and lightly golden.
- They are traditionally served with a spoon of sour cream, cold-stirred strawberries and Norwegian goats cheese.
