  • 250 g mini new potatoes, sliced
  • Half a red pepper, sliced
  • Half an onion, chopped
  • 100 g chorizo, sliced
  • 1/2 tsp smoked paprika
  • 2 tsp cumin
  • 100 g cherry tomatoes
  • 200 g spinach
  • 4 eggs
  • 1 lime
  • Half an avocado, sliced
  • Handful of coriander
  • Olive oil

  • One large frying pan

Instructions

  1. Preheat the oven to 200C (180C fan).
  2. Heat a large frying pan over medium-high heat. Add enough oil to coat the bottom. Add the potatoes and spread them out into an even layer. Cook, frequently stirring until golden and crisp, about 8-10 minutes; add smoked paprika, 1 tsp cumin, and a pinch of salt for the last minute. Transfer the potatoes to a plate and place the pan back on the heat.
  3. Add a splash of olive oil and sauté the chorizo, onion and peppers for 4-5 minutes, until the onion has softened and chorizo crisped up. Add the tomatoes, spinach, 1 tsp cumin and juice from 1/2 lime. Cook for a couple of more minutes until the spinach has wilted.
  4. Add potatoes back to the vegetables and give it a good stir to ensure all is well mixed. Create 4 wells in the mixture and crack one egg into each.
  5. Place the pan in the middle of the oven and cook for 7-9 minutes, depending on how you like your eggs.
  6. Remove from the oven and serve with sliced avocado, wedges of lime and fresh coriander.
