Fish Burgers

  • 500 g haddock
  • 500 g cod
  • 4 tsp salt
  • 1 tsp freshly ground black pepper
  • 4 tbsp cornstarch
  • 500 ml whole milk
  • 4 tbsp melted butter
  • 2 eggs
  • ¼ tsp nutmeg

Red Slaw

  • 1 medium red cabbage, thinly sliced
  • ¼ red onion
  • 100ml mayonnaise
  • 2 tbsp apple cider vinegar
  • 2 tbsp sugar
  • ½ tsp dried dill
  • ½ tsp celery seeds
  • 1 tsp salt
  • ½ tsp fresh ground black pepper

Pepper mayonnaise

  • 200 ml mayonnaise
  • 1 tsp lemon juice
  • 1 tsp freshly ground pepper

You Will Also Need

  • Food processor
  • Two large mixing bowls
  • One large frying pan

  1. Place the fish in a food processor with salt and pulse until you have a rough paste. Add in the other ingredients by hand, using the milk as needed and knead until everything is well combined. Cover and place in the fridge while making the red slaw.
  2. Whisk together the mayonnaise, apple cider vinegar, sugar, dill, celery seeds, salt and pepper in a large mixing bowl.
  3. Slice the red cabbage and red onion thinly and add to the mixture, tossing it well to combine. Cover the bowl and place it in the fridge until ready to serve.
  4. Make the fish burgers by using a spoon, shape them into patties and cook them in a frying pan on medium-high heat until golden brown, about 2-3 minutes on each side.
  5. While cooking the fish burgers, add the ingredients for the pepper mayonnaise in a bowl and whisk well together, toast the burger buns and slice the tomato into four thick slices.
  6. Spread the mayonnaise on the bottom and top bun. Add lettuce and tomato on the bottom bun finishing off with the fish burger, red slaw and top bun. Dig in!
