Herby Frittata with Smoked Salmon

  • 1 tbsp olive oil
  • 1 fennel bulb, thinly sliced
  • 1 large leek, thinly sliced
  • 50 g fresh herbs of your choice, chopped (used here; a mix of parsley, dill, chives, mint and tarragon)
  • Salt and pepper, to taste
  • 8 eggs
  • 100 ml milk
  • 100 g smoked salmon slices
  • 1/4 red onion, thinly sliced, to garnish

You Will Also Need:

  • One large frying pan
  • One medium mixing bowl

Instructions

  1. Preheat the oven to 180C (160C fan).
  2. Heat an ovenproof frying pan over medium heat, add the olive oil and cook the fennel and leek until softened about 5-7 minutes.
  3. While the vegetables are cooking, whisk eggs and milk together in a bowl. Add most of the herbs (leave some to garnish) and season with salt and pepper.
  4. Pour the egg mixture over the vegetables and cook for a couple of minutes before transferring the frittata to the oven. Bake for 10-12 minutes, or until golden and just set.
  5. Spread the salmon on top of the frittata and garnish with red onion and the remaining herbs. Slice and serve with a green salad and fresh bread.
