Curried Tenderstem Broccoli on Sourdough

  • 1 tsp curry powder
  • 1 tbsp olive oil
  • 200 g tenderstem broccoli
  • 2 large eggs
  • 2 slices of sourdough bread
  • 2 tbsp natural yoghurt
  • 2 tbsp pomegranate seeds

You Will Also Need

  • One baking tray
  • One small saucepan

Instructions

  1. Preheat oven to 200C (180C fan).
  2. Place the broccoli on a baking tray, drizzle with oil and spices and mix well together.
  3. Roast for 10-12 minutes, until cooked but still crispy.
  4. While the broccoli is in the oven, bring a small saucepan with water to a boil, lower the heat and simmer the eggs for 8 minutes. Rinse under cold water to stop the cooking process, peel and halve.
  5. Toast the sourdough and spread with the yoghurt. Split the broccoli and eggs between the slices and finish off with the pomegranate seeds.
