Crunchy Tangy Slaw

The perfect accompaniment for meat or fish, a sandwich filler, a bbq must have - this fresh slaw is infinitely tastier than any shop bought version, better for you, cheaper and super quick and easy.


You can change the ingredients depending on taste / what you have in the fridge - sometimes I’ll add apple, sometimes celery, sometimes seeds or nuts, sometimes raw cauliflower. You could add sultanas or other dried fruit too if that’s your thing, but I always start with the recipe below.


I like my slaw only lightly dressed but you can use more mayo for a creamier version.


This will make a relatively large batch - enough for a family bbq with leftovers.

  • 150ml mayonnaise
  • zest and juice 1 lemon
  • 2 tbsp apple cider or white wine vinegar
  • 2 tbsp wholegrain mustard
  • 1 tsp celery salt
  • ¼ head white cabbage
  • ¼ head red cabbage
  • 3/4 carrots
  • 1 large onion (white or red)
  • 1/2 fennel bulb

Instructions

  1. Using a mandoline if you have one, very thinly slice all of the vegetables into long thin strips, place them into a large bowl and toss to combine.
  2. In a separate small bowl whisk together the mayonnaise, lemon zest and juice, vinegar, mustard and celery salt and season generously.
  3. Add the dressing to the mixing bowl with all of your vegetables and combine well and refrigerate. Will keep for a day or two in the fridge.
