  • 8 good quality sausages (used here - a mix of both fennel and truffle sausages)
  • 1 tbsp olive oil
  • 1 carrot, finely diced
  • 1 onion, finely diced
  • 2 cloves of garlic, finely chopped
  • 1 bunch of asparagus, bottoms snapped off and cut into 3 pieces
  • 1 tbsp plain flour
  • 1 tsp Dijon mustard
  • 300 ml chicken stock
  • 100 g peas
  • 400 g cannellini beans, drained and rinsed
  • 100 ml double cream
  • Salt and pepper, to taste
  • Fresh flat-leaf parsley, to garnish

  • One large frying pan

Instructions

  1. Heat a large frying pan over medium-high heat and cook the sausages on all sides until cooked. Remove the sausages from the pan and set them aside.
  2. Lower the heat to medium and add the oil to the pan together with the carrots and onion. Add a pinch of salt and leave to cook for 4-5 minutes until soft. Add garlic and cook for another minute.
  3. Add flour and give it a good stir before adding the mustard and chicken stock before stirring again. Bring to a simmer.
  4. Once the mixture is simmering, add the cannelloni beans, asparagus, double cream and the cooked sausages. Simmer for 7-8 minutes, until vegetables are al-dente and the sauce has thickened. Add the peas for the last minute—season to taste with salt and pepper and garnish with flat-leaf parsley.
