  • 40 g unsalted butter
  • 2 carrots, peeled and cut into thin, short strips
  • 1 fennel bulb, trimmed and cut into thin short strips (keep the fronds)
  • 1 parsnip, peeled and cut into thin, short strips
  • 1 large leek, washed and thinly sliced, divided
  • 1250 ml fish stock
  • 500 g salmon, cut into pieces
  • 300 ml double cream
  • Salt and pepper, to taste
  • Fennel fronds and chives, finely chopped for serving

You Will Also Need:

  • One large casserole

Instructions

  1. Place a large casserole on medium-high heat and add the butter. Once warm, add the carrots, fennel and parsnip together with half of the leek and cook for 5 minutes, until vegetables are softened but still firm.
  2. Add fish stock and bring to a boil, reduce the heat and add the salmon. Leave to simmer gently for 5 minutes until the salmon is cooked.
  3. Stir in double cream and season to taste with salt and pepper.
  4. Divide the soup between four bowls and garnish with the remaining leek, fennel fronds and chives before serving immediately.
