  • 4 large chicken thighs, with bone and skin
  • 8 garlic cloves, peeled and crushed
  • 200 ml dry white wine
  • 300 ml chicken stock
  • 300 ml double cream
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 tbsp fresh tarragon leaves, chopped
  • 200 g fresh spinach
  • Salt and pepper, to taste

  • Two large frying pans

Instructions

  1. Pat the chicken thighs dry and season generously with salt and pepper.
  2. Heat a tbsp of oil in a large frying pan and add the chicken with the skin side down. Add the crushed garlic. Cook until the chicken skin is golden and crispy.
  3. Turn the chicken around, add the butter, and cook for a couple of minutes or until golden.
  4. Remove the chicken from the pan and place it on a plate while making the sauce. Remove most of the fat from the pan, but leave the garlic.
  5. Add wine and simmer until almost evaporated. Pour in stock and cream and stir while bringing to a boil. Turn down the heat and leave to simmer until the sauce starts to thicken.
  6. Stir in the fresh tarragon and add the chicken, skin up, to the sauce. Leave to simmer on low heat for 8-10 minutes, or until the chicken is cooked through. Stir or shake the pan gently a few times while cooking and adjust seasoning if necessary.
  7. While the chicken is cooking, cook the spinach quickly in a large frying pan until it just collapses. Season lightly with salt and pepper and place the spinach in the pan with the chicken.
  8. Sprinkle with extra herbs and serve. Delicious on its own or with a starchy side to soak up all that sauce.
