Creamy Cheesy Mustardy Cauliflower

Cauliflower cheese is a winner at the best of times but this one is especially good.

Serve with roast chicken or pork, or with sausages or grilled steak, or chunky white fish (anything really!).

  • 1 large cauliflower (broken into florets)
  • 1 small onion (finely chopped)
  • ½ tsp turmeric
  • 1 tsp mustard powder
  • 1 tsp mustard seeds
  • 2 green chillies (deseeded and finely chopped)
  • 200 ml double cream
  • 200 g mature cheddar
  • 15 g fresh white breadcrumbs
  • A sprig of parsley
  • A generous knob of butter
  • Instructions

    1. Preheat oven to 180c
    2. Steam the cauliflower until just softening, set aside and leave to cool for a while.
    3. Melt the butter in an ovenproof dish or pan over a medium heat before adding the onion. Sauté the onion until soft and golden. Add the mustard powder, turmeric and chillies, stir through and cook for another couple of minutes before adding the mustard seeds and frying for another minute
    4. Add the cream,150g of the cheddar and a good pinch of salt and stir to combine. Simmer for 2-3 minutes until the sauce has thickened. Add the now slightly cooled cauliflower, coating it in the lovely creamy, cheesy, mustardy sauce before removing the pan from the heat.
    5. In a bowl combine the remaining cheddar with the breadcrumbs and parsley before sprinkling it over your cauliflower. Bake in the oven for 5-10 minutes until the sauce is bubbling hot, before placing it under a super hot grill for another 5 minutes or so until the top is golden and crisp (keep an eye on it to make sure it doesn’t burn).
    6. Remove from the grill and allow to rest for 5 minutes or so before serving.
