  • 1 tbsp butter to grease the pan
  • 300 ml milk
  • 130 g sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • ½ tsp salt
  • 60 g plain flour
  • 300 g cherries, pitted and halved
  • Icing sugar, for dusting

You Will Also Need:

  • One large bowl
  • One large pie dish or skillet

Instructions

  1. Preheat the oven to 170C.
  2. Butter the pie dish or skillet generously and set aside.
  3. In a large bowl, whisk together milk, sugar, eggs and vanilla. Add the flour and salt and whisk until smooth and free from lumps.
  4. Spread the cherries in the prepared dish and pour over the batter.
  5. Bake in the middle of the oven for 1 hour. The Clafoutis is ready when puffed and brown on the edges. Use a knife to check the centre and remove it from the oven when the knife comes out clean.
  6. Remove from oven and place on a cooling rack.
  7. Dust with icing sugar and serve lukewarm. Perfect on its own or serve with a scoop of vanilla ice cream or whipped cream.
