  • 135 g plain flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • 1 large egg
  • 25 g butter, melted
  • 1 banana, roughly chopped
  • 150 ml milk
  • Food colouring (optional)

Instructions

  1. Sieve together the flour and the baking powder and stir in the caster sugar.
  2. Put the butter, milk, egg and banana into a food processor or blender and blitz until smooth (if you don’t have a blender you can mash the banana well and beat the egg before then whisking it all together).
  3. Add the wet mix to the dry ingredients and whisk until smooth, ensuring there are no lumps of flour.
  4. To make colourful pancakes as we’ve done here add a few drops of food colouring to your batter and whisk through. (For an ombré effect try starting with just a little food colouring and adding a drop or two more between batches).
  5. Heat a knob of butter in a frying pan over a medium low heat and ladle the batter into the pan to form 3-4 small puddles (we used an egg cup to measure), cook for around 2-3 minutes or until bubbles form on the surface, flip and cook for a further 2 minutes or so on the other side.
  6. Repeat until you’ve used all of the batter.
  7. Serve warm with the toppings of your choice. (Dani suggests berries, maple syrup, bacon AND chocolate spread!).
