  • 300g golden caster sugar
  • 5 large eggs
  • zest and juice 3 blood oranges (around 150ml juice)
  • 150ml flavourless oil (sunflower, groundnut, corn oil)
  • 280g self raising flour
  • 150g icing sugar
  • 2-3 tbs blood orange juice
  • Butter for greasing
  • A 2.5 litre Bundt tin or loaf tin
  • Edible flowers and orange zest to decorate (optional)

Instructions

  1. Preheat oven to 180C/160C fan/gas 4
  2. Grease your bundt tin very well with melted butter, using a pastry brush to make sure you get into all of the nooks and crannies, and dust with flour - tapping off any of the excess.
  3. Using a free standing mixer or electric hand whisk beat together the eggs, sugar and grated zest for around 10 minutes, until it’s thick and pale.
  4. On a slow/ med speed slowly add the oil and juice and mix until fully combined.
  5. Sieve in the flour and mix until it’s combined and smooth.
  6. Poor the batter into your prepared tin and place on a baking tray. Bake for around 35-40 minutes or until an inserted cake skewer comes out clean.
  7. Allow to cool in the tin for 10 minutes before turning it out into a rack to cool completely.
  8. To ice add just enough juice to the icing sugar to make a thick, lava like icing and drizzle over your cooled cake. Finish with orange zest and edible flowers.
