Beef Thai Salad

Ingredients

Dressing

  • 2 tbsp fresh lime juice
  • 1 garlic clove, crushed
  • 1 tbsp finely chopped palm sugar (caster sugar can be used)
  • 1 tbsp fish sauce
  • 2 tbsp sesame oil
  • 1 tsp soy sauce
  • 2 tsp finely grated fresh ginger
  • ½ red chilli, finely chopped

Salad

  • 300 g beef steak of your choice (used here: Wagyu Denver Steak)
  • 150 g baby leaves
  • 100 g baby tomatoes, halved
  • 4 -5 radishes, finely sliced
  • 2 tbsp mint, roughly chopped
  • 2 tbsp coriander, roughly chopped
  • 50 g toasted peanuts

You will also need...

  • 1 large serving plate
  • 1 small bowl

Instructions

  1. Whisk together lime juice, garlic, fish sauce, sesame oil, soy sauce, ginger, chilli and sugar in a bowl.
  2. Preheat a barbecue grill or pan on high. Cook steak on grill for 2-3 minutes each side for medium/rare or until cooked to your liking. Transfer to a plate and leave to rest while making the salad.
  3. Place the baby leaves, tomatoes, radishes, mint, coriander and peanuts on a serving plate.
  4. Thinly slice the beef and add to the salad. Drizzle with dressing and serve immediately.
