Asparagus and Pea Frittata

Ingredients
- 6 large eggs
- 1 bunch of asparagus, trimmed
- 1 handful of peas, defrosted if frozen, cooked if fresh
- 1 knob butter
- 1 tbs of extra virgin olive oil
Instructions
- Preheat the oven to 180c / gas mark 4.
- Beat the eggs with a pinch of salt and pepper.
- Heat the oil and butter in a 19cm ovenproof frying pan or cast-iron dish over a medium heat. Add the asparagus and cook until they are just beginning to soften and add the peas.
- Pour over the eggs and cook for 3 minutes or so.
- Transfer to the oven and bake for 15 – 20 minutes until golden and fluffy.
- Eat hot or cold with a leafy salad and a drizzle of hot sauce.
