Asparagus and Pea Frittata

  • 6 large eggs
  • 1 bunch of asparagus, trimmed
  • 1 handful of peas, defrosted if frozen, cooked if fresh
  • 1 knob butter
  • 1 tbs of extra virgin olive oil
  • Instructions

    1. Preheat the oven to 180c / gas mark 4.
    2. Beat the eggs with a pinch of salt and pepper.
    3. Heat the oil and butter in a 19cm ovenproof frying pan or cast-iron dish over a medium heat. Add the asparagus and cook until they are just beginning to soften and add the peas.
    4. Pour over the eggs and cook for 3 minutes or so.
    5. Transfer to the oven and bake for 15 – 20 minutes until golden and fluffy.
    6. Eat hot or cold with a leafy salad and a drizzle of hot sauce.
